One of the challenges of birthdays during Purtassi is finding an eggless cake recipe that works. This eggless chocolate cake is a predecessor to the last cake I made about a month ago, in preparation for my sons birthday. I opted for a sheet cake instead of layer cake because of the theme of this years birthday, Pirates.  I also love sheet cakes because they are so easy to make. A thin cake layer smothered in frosting. Cover with an icing sugar or chocolate ganache layer in equal or double thickness for maximum delectability.

How to Make an Egg-less Chocolate Cake


 I used the same ingredient ratios as the eggless vanilla cake, but halved the flour content and added ½ cup of cocoa powder. A lesson learnt after making a flour-less chocolate cake with cocoa powder, is that cocoa powder serves as a superb substitute for flour in cakes. The result is a rich dark chocolate cake. Other variations to this recipe are the use of full-fat yogurt instead of buttermilk. The result was a dark, moist chocolate cake without using eggs. It is far lighter than  the eggless chocolate cake recipe which uses butter and lemon juice.
 
To substitute the eggs, combine yogurt, baking powder and bicarbonate of soda. Allow 5 minutes to activate before adding oil. This combination of ingredients will result in a thick egg-like consistency.

I used a 22cm x 32cm x 4cm rectangular pan. The ingredient quantity resulted in a 3 cm thick cake. To make a thicker cake in a deeper pan, double all quantities.

Eggless Chocolate Sheet Cake Recipe

An easy to make for a quick tea time treat yet moist and luscious for special occasions.

Ingredients

  • 1 ½ teaspoons baking powder
  • 1 teaspoon of bicarbonate of soda
  • ½ cup flour
  • ½ cup cocoa powder
  • 1 cup full fat yogurt
  • ½ cup olive oil or vegetable oil
  • ½ cup of sugar
  • ½ teaspoon vanilla essence

Instructions

  1. Preheat the oven to 150 degrees Celsius
  2. Combine yogurt, baking powder and bicarbonate of soda. Set aside for 3-5 minutes until the mixture bubbles and rises.
  3. Grease a sheet pan. I used olive oil to grease. Alternatively use baking paper.
  4. Sift flour, cocoa and icing sugar.
  5. Add olive oil to the yogurt mixture. Slowly sift in the flour, cocoa and sugar.
  6. Combine to form a smooth batter.
  7. Pour batter evenly into the sheet pan. Bake for 20 minutes. Times may vary depending on the type of oven used. I used the fan function which cooked in 20 minutes. To test if the cake is cooked poke with a skewer stick if it comes our clear the cake is ready. Allow cooling before removing for cake pan.

How to Make Chocolate Ganache with Cream and Dark Chocolate

 

Decorate as desired. I topped this cake with a chocolate ganache frosting. Some recipes use corn syrup for a silky consistency. I prefer cream and chocolate. To make, heat 200ml fresh cream on low heat then add 250g dark chocolate. Stir slowly until the chocolate has melted. Allow cooling at least 2 hours. Stir until a thick paste-like texture is achieved before applying over a cooled cake. 

 


 Pirate Themed Sheet Cake


This year my sons birthday fell on a weekday again, despite curating a Pinterest board, weeks in advance, there is never enough time to make everything I set out to make. This year I opted for a simple sheet cake topped with Playmobil figures and a few homemade props including a pirate sail and a shortbread boat.

 I opted for shortbread instead of fondant. To make simply mold into desired shape, refrigerate for an hour then bake to retain the form. For the frosting I used buttercream icing, plain and  coloured  blue with food coloring,
