 All Natural Fruit Popsicles

Ice lollies (ice blocks, popsicles) were cold treats usually enjoyed after school on hot summer days. When in Primary School we used to buy ice blocks from a vendor outside the schoolyard, whom we referred to as the ‘basket lady’. Not because she was crazy but because she sold her treats out of a basket.  She sold sweets and ice blocks made from frozen fruit juice in small plastic packets. The local supermarket sold a more varied choice of commercial popsicles –it was common to buy these cold treats for the bus trip back home. When we got home from school on summer days, Amma usually had a jug cold juice awaiting our arrival!

This recipe is an alternative to making popsicles from sugary juices – instead use fresh fruit/frozen fruit to make all natural popsicles.

How to Make Ice Lollies / Popsicles
Ice Lollies require a little more liquid: fruit ratio than Sorbet in order to set. Honey is also not necessary in this recipe but can be used to sweeten the lollies.

Prep time:  10 minutes
Set time: 5 hours
Total time: 5 hours  10 minutes

Ingredients

  • 350g frozen blueberries or fruits of your choice
  • 1 tablespoon creamy honey (optional)
  • 70 ml water

Method

1. Use frozen fruit or cut and freeze fresh fruit overnight to make this recipe.
2. Place the blue berries/fruit, honey and water in a blender. Blend until a smooth mixture forms
3. Place the sorbet mixture in lollipop moulds or ice cube trays. You can also use any cups or containers in the kitchen as moulds. Set for 5 hours or overnight.
