Chocolate Coconut squares are an all chocolate version of  popular lamingtons. They are made with coconut on the inside and out. A soft chocolate cake covered with chocolate icing then topped with desiccated coconut. For a more decadent version dip in melted chocolate like my lamington sandwiches.




This recipe uses butter, but you can also use coconut oil for maximum coconut flavour. For this I  used coconut milk instead of cows milk. The batter may appear 'dry', don't be discouraged, the combination of ingredients results in a soft cake when baked. It is crumbly from the use of coconut on the inside.

How to Make Chocolate Coconut Squares


These choc coconut squares  are made by making a rectangular cake first, much like lamingtons, then is sliced into squares. Start by making the cake itself. While the cake bakes prepare the icing.

To make the cake combine wet ingredients first then slowly sift in dry ingredients. I used half a cup of flour and half a cup of cocoa in this recipe. After making a flour less chocolate cake with only cocoa powder and melted chocolate, I prefer this method with reduced flour for chocolate cakes.

I use melted butter instead of softened butter, because the coconut is fairly dry and needs some liquid to bind to. Other liquid in this cake is coconut milk, which I used mainly for flavour. Milk can also be used as a substitute.


Once a smooth batter forms, pour int a greased baking pan and bake on moderate heat.

After baking, cool before covering with icing. Top with desiccated coconut.

Top with desiccated coconut before slicing into squares.

Chocolate coconut squares are a decadent chocolatey alternative to regular lamingtons. Coconut on the inside and out, it makes for a rich tea time treat.

Ingredients:

  • 1/2 cup flour
  • 1/2 cup cocoa powder
  • 3/4 cup desiccated coconut
  • 2 eggs
  • 125g  butter to be melted (or coconut oil)
  • 1/2 cup coconut milk
  • 1/4 cup sugar
  • 1 teaspoon baking powder
For the Icing
  • 1/2 cup butter
  • 1 cup icing sugar
  • 1/3 cup cocoa powder
For coconut topping
  • 1/4 cup desiccated coconut

Instructions:

  1.  Preheat the oven to 150 degrees Celsius.
  2.  Melt butter.
  3. When butter is cool, combine with eggs and coconut milk.
  4. Combine flour, cocoa and baking powder.
  5. Combine wet and dry ingredients. Add coconut.
  6. Mix until a thick batter forms.
  7. Pour into a greased square or rectangular baking pan.
  8. Bake for 25 minutes.
  9. Remove from oven. Allow to cool before icing.
  10. To prepare icing combine softened butter with cocoa and icing sugar. Apply to cake once cool. Top with desiccated coconut.
  11.  Cut cake into squares.  Enjoy with a cup of tea.

  1. I always enjoy reading your stories attached to your awesome easy to follow recipes. I would love to try this recipe but would like to make sure whether your meant 125ml or 125g of butter.
