A chilli cheeseburger casserole combines all the flavour and taste sensations of a chili cheese burger packed into a single dish. They are increasingly popular Keto meals because they offer all the yumminess of a burger without the carbs! Casseroles in general are easy to prepare and its combination of protein, and starch in mostly cheesy sauces make it a high contender for best comfort food! This recipe is my attempt at making an authentic chili cheeseburger casserole, one that resembles mini cheeseburgers drenched in a cheesy sauce. Ideal as low carb lunch with a big green salad!
How to Make A Chilli Cheeseburger Casserole
Casseroles by definition are meals that are baked in one dish! The same applies when making cheeseburger casseroles. Recipes can vary as vast as ones imagination! Key ingredients in my casserole include mince meat, garlic, homemade bbq sauce, gherkins, jalapenos, green chili, cheddar cheese, onion, red onion, eggs and cream.
Some recipes fry the mince then layer the ingredients in a similar fashion as lasagna or mousakka. I have opted for making mini burgers covered in a sauce.
I first prepared the meat as I do for regular burgers. I rolled meat out then cut out to make same sized circles instead of rolling by hand.
I seared the burgers for a minute or two just to seal the form. I then assembled the cheese burgers by layering with onion, gherkins, bbq sauce and cheddar.
To make the sauce I combined eggs, cream and cheddar, then poured over the burgers before baking.
I recommend sticking to just two eggs otherwise it may end up like a cheeseburger omelet instead. The more cheddar you use the gooier it will be.

Chili Cheeseburger Casserole Recipe

This chilli cheese burger casserole combines all the fiery goodness of a chili burger without the carbs!
Ingredients:
- 400g mince meat
- ½ onion
- ½ red onion
- 2 cloves garlic
- 1 teaspoon paprika powder
- 1 green chilli
- ½ cup pickled jalapenos
- ½ cup gherkins
- 2 cups cheddar cheese
- 250ml cream
- 2 eggs
- 4 cheddar slices
- homemade bbq sauce (see recipe)
- ½ red onion for garnish
- Salt
- ½ teaspoon butter for greasing casserole
Instructions:
- Preheat oven to 180 degrees Celsius
- Prepare the ingredients. Chop onions and green chilli fine. Grate the garlic. Slice gherkins if necessary.
- Prepare the sauce. Combine 2 eggs, cream and 2 cups cheddar. Mix. Add half of the chopped onions and set aside.
- Combine meat, chopped onions, chopped chilli, paprika and salt. Mix until combined. Roll into even sized balls then press flat or roll meat then cut with a cutter.
- Fry for a minute or two. Grease casserole dish with butter. Remove burgers from heat. Place on dish.
- Compose your chilli cheese burger. Layer with gherkins, onion rings, and jalapenos. Once all burgers are assembles, pour sauce over. Top with remaining pickled jalapenos and gherkins
- Bake for 30 minutes until the sauce has thickened and cheese melted.
- Serve warm. Top with red onion if you are an onion fan like me.
