Sardine Sandwich Recipe

Canned sardines are often overlooked as the cheaper –inferior alternative to tuna - yet sardines have much more to offer than just their affordable price tag. Canned sardines like most fish products are rich in omega -3 fatty acid and are a source of protein making them a healthy food choice for salads, sandwiches or pasta dishes. Sardine sandwiches were one of Amma’s contingency lunches i.e. lunch on Fridays -her primary day for housekeeping. Amma's sardine sandwiches always contained finely sliced onions, tomatoes, sometimes cheese for my sisters and I and chilies for my father. Delicious as Amma’s sardines sandwiches was - variations to this simple sandwich are endless.
