All Natural Creamy Ice Lolly Recipe

Everybody loves ice cream  –in a tub- in a cone or cup and even the ones on a stick. With summer finally making an appearance after a few weeks of gloomy spring days this almost guilt free creamy ice lolly is sure to be one of my regular summer treats. Made from just three ingredients crème friache, honey and fresh strawberries it is all natural and simple enough - even for kids to try - especially now that the school holidays are nearing.

Creamy Ice Lolly Recipe EXPRESS RECIPE: SUMMER TREATS

Freezing time: overnight
Total time: 1 day
Yield: Serves 3-4 people


Ingredients Method

100g crème friache

1. Blend the strawberries.
50g fresh or frozen strawberries  2. Combine with honey and crème friache.
1 tablespoon honey  3. Pour mixture into ice lolly moulds.
2 or 3 fresh strawberries chopped  4.  Add chopped fresh strawberries.

 5. Freeze overnight.






TIP:  No lolly moulds - no problem - simply use regular ice cube trays. Use toothpicks instead of lolly sticks. See full instructions in the Homemade Popsicles Recipe.



Homemade Popsicles

 All Natural Fruit Popsicles


Ice lollies (ice blocks, popsicles) were cold treats usually enjoyed after school on hot summer days. When in Primary School we used to buy ice blocks from a vendor outside the schoolyard, whom we referred to as the ‘basket lady’. Not because she was crazy but because she sold her treats out of a basket.  She sold sweets and ice blocks made from frozen fruit juice in small plastic packets. The local supermarket sold a more varied choice of commercial popsicles –it was common to buy these cold treats for the bus trip back home. When we got home from school on summer days, Amma usually had a jug cold juice awaiting our arrival!



This recipe is an alternative to making popsicles from sugary juices - instead use fresh fruit/frozen fruit to make all natural popsicles.

How to Make Ice Lollies / Popsicles
Ice Lollies require a little more liquid: fruit ratio than Sorbet in order to set. Honey is also not necessary in this recipe but can be used to sweeten the lollies.

Ingredients
  • 350g frozen blueberries or fruits of your choice
  • 1 tablespoon creamy honey (optional)
  • 70 ml water
Method

1. Use frozen fruit or cut and freeze fresh fruit overnight to make this recipe.
2. Place the blue berries/fruit, honey and water in a blender. Blend until a smooth mixture forms
3. Place the sorbet mixture in lollipop moulds or ice cube trays. You can also use any cups or containers in the kitchen as moulds. Set for 5 hours or overnight.


Blueberry Sorbet Recipe

Make Simple Sorbet with Just 3 Ingredients...


Sorbet is a good alternative to ice cream. This frozen desert is commonly made from fruit pulp and a sugar syrup - sometimes with added flavourants or liquor. For this recipe I have omitted the sugar syrup instead used creamy honey...which when combined with a small amount of water acts as a good binding agent for the crushed frozen fruit-resulting is a very soft sorbet texture and one that is easy to make too!

Total time: 5 hours  10 minutes
Yield: 4 servings

Ingredients
  • 350g frozen blueberries or fruits of your choice
  • 4 tablespoons creamy honey
  • 30 ml water
Method

1. Use frozen fruit or  freeze fresh fruit overnight to make this recipe.


2. Place the blue berries, honey and water in a blender. Blend until a smooth mixture forms.

3. Place in a container. Freeze for 5 hours or overnight.
4.Scoop and serve with fresh berries or serve plain.
